Seasonal Beauty Supper: Roasted Butternut Squash Risotto

Fall is a season of nutritious, skin-supporting foods like pumpkin, sweet potato and squash that make mouth-watering seasonal meals. Base tonight’s supper around one of these tasty orange veggies and you’ll get a hefty dose of beta carotene (which is converted to vitamin A, a major vitamin for healthy skin), vitamin C and fiber, all fantastic for radiant skin and tissue repair. With each bite you’ll be combating wrinkles, reducing inflammation and promoting glowing skin and healthy vision.

One of my favorite new fall dishes, from the incredibly talented Culinary Nutritionist Stefanie Bryn Sacks, is packed with beauty nutrition: Roasted Butternut Squash Risotto.

Here’s the recipe– it’s easy, even for a risotto beginner! Don’t be afraid to add extra squash, onions and garlic for an even bigger dose of veggie nutrition. Stefanie suggested the recipe as a perfect dish for both kids and adults at her recent Food Solutions workshop at NYC’s Urban Zen Foundation. Who wouldn’t love a bowl of this on a rainy autumn evening?
